The Macallan Meridian

 The Macallan Double Cask 12 Years Old

A composed interpretation of a classic Old Fashioned, the Meridian brings together citrus brightness and gentle salinity, reflecting the balance of European and American oak

Ingredients

  • 50 ml The Macallan Double Cask 12 Years Old
  • 10 ml Valdespino Manzanilla Deliciosa
  • 20 ml Orange syrup

Method

Stir all ingredients with ice until well chilled. Strain into a rocks glass over a large ice sphere. Garnish with an orange peel, expressed.

Pairing

Celeriac salad with caviar, citrus curd and apple, finished with maple syrup

 

The Macallan Shadow

The Macallan Double Cask 18 Years Old

An interactive, slow-evolving serve that reflects the influence of sherry seasoning. As the elements combine, the whisky reveals notes of dried fruit and gentle spice.

Ingredients

  • 30 ml The Macallan Double Cask 18 Years Old
  • 10 ml Valdespino Vermouth

Method

Pour the whisky into a highball glass. Place a half-sphere of smashed ice on top and drizzle the vermouth over it. Gently break the ice to allow the flavours to integrate.

Pairing

Duck ham with dried apricot hoisin, peach and vanilla purée, and candied ginger.

The Macallan Robur

The Macallan Sherry Oak 12 Years Old

Defined by its rich natural colour, Robur draws on the depth of sherry-seasoned European oak, with a delicate infusion of hibiscus lending a deep red hue, layered aromatics and a lengthened finish.

Ingredients

  • 50 ml The Macallan Sherry Oak 12 Years Old
  • 5 ml Valdespino Pedro Ximénez El Candado
  • 30 ml freshly infused spices
  • Ginger ale

Method

Prepare the infusion using rooibos vanilla, Sichuan pepper, fennel seed and cardamom in hot water, finishing with hibiscus. Combine the infusion with whisky and PX in a glass over ice. Top with ginger ale and garnish with an orange twist.

Mushroom soufflé with sweet potato and vanilla mash, served with a mushroom salad

 

The Macallan Alba

The Macallan Colour Collection 12 Years Old

A citrus-led serve with a refined texture, Alba balances freshness with the underlying sweetness of American oak, finishing clean and precise.

Ingredients

  • 50 ml The Macallan Colour Collection 12 Years Old
  • 15 ml Vanilla syrup
  • 20 ml Lemon juice
  • 10 ml Egg white

Method

Shake all ingredients with ice and double strain into a coupe glass. Finish with a few drops of Valdespino sherry vinegar.

The Macallan Solero

The Macallan Colour Collection 15 Years Old

Inspired by the warmth of midday sun, Solero highlights stone fruit character, complemented by the coastal influence of Manzanilla.

Ingredients

  • 1/4 tinned peach
  • 10 ml syrup
  • 15 ml Valdespino Manzanilla Deliciosa
  • 50 ml The Macallan Colour Collection 15 Years Old

 

Method

Muddle the peach with syrup. Add Manzanilla and whisky, shake with ice and double strain into a white ceramic cup.

Pairing

Confit egg yolk with saffron, dried apricot purée and dehydrated pollen.
